Quick Spice Cake


This spice cake serves as a great quick sweet treat in a rush. It's super easy to put together, and good enough to serve without frosting, yet versatile enough to serve with fruit on the side.

Quick Spice Cake

1/4 Cup butter (melted)
2 eggs
2 Cups all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/4 teaspoon ground ginger
1/2 teaspoon vanilla
1 1/2 Cups sugar
1  1/4 Cups buttermilk (or sour milk)

In the first bowl cream eggs with butter and sugar. Add vanilla.

In another bowl combine all dry ingredients.

Alternately, add buttermilk and dry ingredients to the butter mixture.

Pour onto parchment-paper-lined baking sheet. I like to use a large one to make a thin cake, approximately 24" by 12" baking sheet. The batter is spread to about 1/2" thick over the sheet.

Bake at a 350 degree oven until golden brown and a toothpick comes out clean in the middle, about 20 minutes.
